Grating
katsuo. Ozawa-san grates a wood-hard block of dried, smoked bonito
fish, known as "katsuo" in Japanese. The grated form of dried
katsuo is called "katsuobushi" and used as a condiment on many
Japanese dishes, such as "ozohni." However, most Japanese buy
their katsuobushi pre-packaged at the store. January, 1999.
